It is the hardest grape to grow and the most difficult wine to make, but if you can get these two things right, then the result is amazing. Clonal selection is very important in the pursuit of a great Pinot Noir, because different clones produce different wines. Some clones of Pinot Noir produce a fruitier character, whereas other clones produce wines of higher tannin and more structure. In Burgundy, only clone 777 is used which produce wines of great structure and longevity. At Highland Spring, clones have been selected which produce good tannin and structure, and are 114, 115, 667 and 777.Highland Spring has two blocks. The “old block” has exclusively clones 114 and 115, whereas the “new block” has all four clones planted together.
